So I surveyed the December calendar. May I just say It’s a Wonderful Life? The next two weeks are jammed packed with the ‘hurry up we need to be there in half an hour’ days and evenings. Hardly a bit of white remains in each calendar square.
So, for this meal plan I am keeping it simple. All in the spirit of Back to Basics: Simple Suppers…
However your days are going, you still have mouths to feed. Basic meal time. We all have to eat! After a full day of school and chasing toddlers, the last thing I want to look at is a long list of ingredients to cook!
Give me easy and make it fast. Or cook it slow. When the rest of the day is a continual challenge I keep mealtime simple. Here are the strategies I use to make suppers easy, inexpensive and delicious.

I also surveyed the pantry and the freezer. With planning some chicken and some ground turkey all fixed up with Back to Basics: Big Shop Cooking, these are the simple meals I’ll turn to:
Meal plan, in no particular order…
• Crock Pot Macaroni and Cheese – a child pleasing meal we can eat by itself before we head out the door.
• Veggie night with a side of cornbread
• Sunbutter or Pimento Cheese sandwiches with soup in the crock pot for those in and out
• Mondays: Spaghetti x 2 – Jenny’s Pink Sauce over noodles with Homemade Bread (put on to cook after lunch) and Meatballs from freezer
• *double noodle amount for Cheesy Pasta for lunch
• Breakfast x 2 – Crock Pot Grits and Pancakes, Orange Juice, turkey bacon
• Italian Stuffed Shells from the freezer – thanks to the Big Cook # 2
• Sloppy Joes (not your average) by Southern Plate with canned peaches and cottage cheese
• Potato Soup in the crock pot
• Sundays: Poppy Seed Chicken Casserole – made the night before with chicken pulled from freezer, Crock Pot BBQ chicken or Crock Pot Cream Cheese Chicken
• Fridays: Pizza x 2
Lunches: Leftovers, Sunbutter® sandwiches, mac and cheese, soup and sandwich, cheesy pasta, loaded baked potatoes, chicken stew from freezer
Cooking Fun with the Children:
• Reindeer Mix
• Sugar Cookies
• even more Hot Chocolate Mix, Gourmet
• and gift making with mixes from Southern Plate
*all Hodgepodge meals prepared with care due to our Trials and Triumphs with allergies
