Old Bay Chicken – Our Maryland Meal

One of the exciting gifts we received in our Pay it Forward package from All Things Beautiful was Old Bay Seasoning. Ideally you use a few shakes of this on a pound or two of shrimp. Of course, after a full day at the beach jumping waves, building sandcastles…See why I loved this box of spices so much? It takes me away…

Yet, we did take it away. I tucked the tin of Old Bay spice in with the groceries we took up to the hills last week. {Remember that two of us went on a Father/Son birthday trip. The rest of us plus Nana (hooray!) got away to the hills} One night we were there we said, ‘Let’s have Phyllis’ meal!” So, I pulled out that tin of Old Bay seasoning and I put a few shakes of it in with the chicken I cooked in the slow cooker.

We made this a bit more of a southern meal by adding a Vidalia onion. An onion that was given to Nana down at the capital. The visitor from Vidalia said the onion had just been picked from the field earlier in the week. {Pause for a vision of a field of Vidalia onions. Vidalia onions are known for having a sweet taste. Also, they don’t make you cry when you chop them up}. Nana and I decided to add a handful of celery too. I threw it all in together in the slow cooker after lunch. Set it to low.

: Old Bay Chicken
  1. Chicken (I used frozen tenderloins)
  2. 2-3 T Old Bay seasoning (depending on how much chicken)
  3. 1/2 Vidalia onion, chopped
  4. 1/4 cup celery, chopped
  1. Chop onion and celery.
  2. Put chicken in slow cooker.
  3. Shake Old Bay seasoning over chicken.
  4. Top with onion and celery.
  5. Cook on low approximately 5-6 hrs.

Preparation time: 10 minute(s)

Cooking time: 5 hour(s)

So, come hungry time, I pulled out the biscuits from Phyllis’ hometown. We talked about Phyllis and her family. We thought about all of them eating these same biscuits. Don’t the biscuits look so pretty on this yellow plate? They didn’t stay there long. See, we dipped them down in the delicious broth the chicken made – all mingled with the spices.

Look at the up-close imprint on each one.

We served it up with homemade mashed potatoes and a scoop of blueberries on the side. Everyone yummed it up!

A happy thanks to All Things Beautiful for a special southern, mountain, Maryland meal!   🙂

    Oh, my! I love your Maryland meal! We were thinking of you guys,too…up in the beautiful mountians relaxing and enoying each other. For friends of the heart, the miles do not matter.
