I am always looking for quick and easy lunches to make for my boys, so I thought I would share a few of our favorites and hopefully a few of you will share yours 🙂
- One of our favorites is Cheesy Crescent Dogs. All you need is a can of crescent rolls, your favorite cheese (shreds or slices) and hot dogs. Just lay out the crescents, add cheese and then roll up a hot dog in the crescent. Bake at 375 degrees for 13-15 minutes.
- Chicken roll-ups are fun and add a little variety to your table. I layer them like this…crescent roll, ham, cheese, and fully cooked chicken strips, roll it all up and bake in a 375 degree oven for about 15 minutes.
- If your family likes sloppy joes, here is a fun twist…you will need crescent rolls, ground turkey or beef, your favorite sloppy joe sauce and shredded cheese. In a 9×9 pan (spray with cooking spray), layer 1/2 of the crescent rolls (leave them flat). Bake in a 375 degree oven for about 10 minutes. While that is baking, brown your ground turkey and drain. Return it to the pan and add about 16oz. of your favorite sloppy joe sauce (homemade or canned). Remove the first layer from the oven. Add sloppy joe mix, then a layer of cheese (your favorite variety and as much as your family likes), then add the remaining crescent rolls (leave them flat). Return the pan to the oven for about 10 minutes.
- Another favorite is Barbecue Cups. Kim has the recipe over at The Daisy Muse. These are easy and delicious and you can change them up in many ways. Instead of barbecue sauce and brown sugar, add taco seasoning and salsa for a Mexican flare or spaghetti sauce and mozzarella for an Italian flare!
- If you want a twist on PB&J, try Peanut Butter Roll-ups. Just spread peanut butter and jelly on a tortilla and roll it up. Then cut into half-inch pieces…these are a favorite at my house. Add banana for a fun twist!
- Want to beef up your mac and cheese? Just add cut-up hot dogs, ham chunks, leftover chicken, or cooked ground beef and add it to the mix….another way to add variety to lunch!
- Another favorite in my house is Mexican grilled cheese, a.k.a. cheese quesadillas! All you need is tortillas and shredded cheese! Grill in a hot skillet until the cheese is melted, fold and cut into triangles. You can serve them with sour cream, pico de gallo, lettuce, tomatoes,guacamole, etc.
