Fast Food for Slow Sundays: Rotel Cheese Dip

Sometimes when you come in from church, you just need something to munch on right away. Or you might need a good ol’ basic dip recipe for the upcoming Super Bowl. If you already know about Rotel Cheese dip, let this serve as your reminder of this tasty and simple snack.

Rotel Cheese Dip

Ingredients

  1. One (1) 32 oz. box Velveeta
  2. One (1) 10 oz. can Rotel tomatoes

Directions

  1. According to how spicy you like it put half or all of the Velveeta into microwave-safe bowl.
  2. Make it easy on yourself and choose a container you can serve the dip in.
  3. Cut up into chunks for quicker melting.
  4. Microwave one minute.
  5. Stir.
  6. Another minute.
  7. Stir.
  8. Continue until mostly melted.
  9. Stir in can of Rotel.
  10. Melt for approximately another minute.
  11. CAUTION – it will be hot!
  12. Stir well and serve with tortilla chips.

Cooking time: 3-4 minutes

Serve with chips!

Every bit as good as queso. And if you decide to only use half of the Velveeta for your dip, you just may have enough left to make some very special grilled cheese sandwiches.

    Sounds good. I make a dip, I call it a mexican dip. I use (an off brand of Velveeta Cheese from a jar), I melt the cheese, mix in salsa, and add in cooked Taco seasoned ground meat (beef, or turkey). I always think it’s better the longer it simmers.
