Two Week Thanksgiving Countdown Plus Recipe

Yes. It’s just two weeks from tomorrow, folks!

Last week I shared with you the $5 Dinner Mom’s new Holiday ebook. This week our turkey is in the freezer. We saved $11 by following a tip in Erin’s Holiday Entertaining Guide. We bought our turkey on sale – at just 79 cents a pound! I have had such fun with the easy holiday ideas from $5 Dinner Mom. And, with Erin’s permission – and just to whet your appetite – I am sharing a Cranberry and Celery Stuffing recipe from her book. (The side items really are my favorite!)

A burst of sweet-tart and crunch make for a wonderful addition to the traditional stuffing mix.

: Cranberry and Celery Stuffing

  1. 3 tablespoons butter or margarine
  2. 1 small onion, chopped
  3. 1 14 oz. package herb seasoned stuffing mix 2 cups thinly sliced celery
  4. 1 cup dried cranberries
  5. 3 green onions, thinly sliced

  1. Preheat oven to 375.
  2. Grease a 2 quart casserole dish, or 9×9 inch glass baking dish with non-stick cooking spray.
  3. Bring 2 cups of water and the butter and chopped onion to a boil, then toss in the stuffing mix until moistened.
  4. Remove from the heat and cover.
  5. Let sit for 5 minutes.
  6. Stir in the celery slices, dried cranberries and green onions.
  7. Spread the stuffing mixture into the prepared baking dish.
  8. Cover with foil.
  9. Bake in the preheated oven for 25 minutes.
  10. Then remove the foil and continue baking 10 to 15 minutes, or until top is golden brown.
  11. Serve Herb and Celery Stuffing.
